STATE-OF-THE-ART TECHNOLOGY Most seafood processors use the blast freezing method, which takes 4 to 6 hours to completely freeze a batch of fish. The slow freezing allows large ice crystals to form inside the fish flesh, thereby affecting the texture and flavor of the finished product. Fisher Farms, on the other hand, uses the individual quick freeze (IQF) technology developed in Europe. IQF quickly brings fresh fish down to the ideal temperature of -18 degrees Celsius in as little as 30 minutes.
